Strawberry Infused Vinegar

Strawberry Vinegar

2 cups champagne, white wine, or white vinegar

1 pint strawberries

Wash, hull, and slice strawberries. Place in a clean jar with a tight fitting lid. Cover with vinegar. Let sit for 2-3 weeks, shaking occasionally. Vinegar will turn pink and strawberries will soften and lighten in color. When ready, strain through a fine mesh strainer or cheesecloth. Place in a clean jar. Vinegar will keep in a cool dry place for up to a year.

Strawberry Vinaigrette

1/4 cup strawberry vinegar

2 t dijon mustard

1 clove garlic, minced

salt, white pepper, honey to taste

1/2-3/4 cup extra virgin olive oil

Combine all ingredients and shake well. 

Variation:  replace dijon mustard with strawberry preserves for a sweeter vinaigrette

Strawberry BBQ sauce

2 cups strawberries

1/4 cup strawberry vinegar

1/3 cup ketchup

2 T soy sauce

2 T honey (or brown sugar or maple syrup)

2 t fresh grated ginger

1 t cayenne

1 small shallot, roughly chopped

1 clove garlic

salt and pepper to taste

Combine all ingredients in a food processor or blender. Pour into a small saucepan and bring to a simmer. Serve hot or cold. Delicious with chicken and pork. 

Strawberry Basil Marinade

1/2 cup strawberry vinegar

1/4 cup chopped basil

1 t crushed red pepper

2 cloves garlic, smashed

2 green onions, chopped

1 lime, juiced

1/2 cup extra virgin olive oil

Salt and black pepper

Combine all ingredients.  Great for grilled chicken and pork.  Marinate at least 4-6 hours.
