Stuffed Mushrooms
20-24 Crimini mushrooms, wiped clean and stem removed from button - SAVE THE STEMS
1/3 cup cream cheese 1/3 cup of bread crumbs (more or less - seasoned or unseasoned) 1/2 pound or more diced bacon pieces cooked until crispy - drained (try this with your favorite sausage too) 2 green onions, diced Ground pepper to taste Freshly grated parmesan cheese Place cleaned and destemmed mushrooms in glass dish. Cook the bacon bits until crispy and drain. Finely chop the mushroom stems and green onion and add them to the bacon bits and cook until the stems and onions have changed color - about 2 minutes. Remove from heat and add the cream cheese and stir until the cheese has melted and mixed nicely with the other ingredients. Slowly add the bread crumbs and mash with a fork until the mixture looks crumbly - not wet to touch but not too dry. You may use a little more or a little less of the bread crumbs. Sprinkle with pepper to taste and mix. Using your fingers or a spoon, put some of the cooked mixture into each mushroom button and cook at 350 degrees until the mushrooms look more brown and wrinkled. Remove and sprinkle with freshly grated parmesan and serve. |
