Vegetable Nuggets

Recipe from the cookbook SODALICIOUS

  • 1 lb. carrots, cut into chunks
  • ½ cup 7UP
  • 1 tsp. salt
  • 1 lb. turnips, cut into chunks (or substitute other root vegetable)
  • 3 tbsp. butter
  • 2 tbsp. finely chopped parsley
  • Pinch of black pepper

In a large saucepan, simmer the carrots in the 7UP for 10 minutes. Add the salt and the turnips. Cover and simmer for 15 minutes. Add the butter, parsley, and pepper and toss lightly.


Makes about 8 servings
