Mashed Potatoes With Horseradish and Chives

  • 2 lbs. red potatoes, cut into quarters
  • ½ cup half and half
  • 3 tbls. whole butter
  • 1 tbls. prepared horseradish
  • 2 tbls. minced chives
  • Salt and pepper

Cooking Instructions- In a small pot, boil the potatoes until tender. Drain and place back into the pot; add the butter, ½ and ½ and horseradish. Mash until blended. Add the chives and season to taste. Serve with asparagus spears (when in season) or green beans.
