Cooking with Coconut

Coconut is one of the most amazing plant-based foods on the planet. It is rich in nutrients that can boost immunity, support heart health, boost natural beauty and even help manage a healthy weight. Megan Roosevelt, Registered Dietitian and author of the new book, Superfoods for Life, Coconut, joined us to share a few heathly and easy-to-make coconut dishes.

Megan says although coconut is higher in saturated fat it’s important to know that the saturated fat in coconut is different than the type of saturated fat we find in animal foods. Coconut is rich in Medium Chain Triglycerides, this type of saturated fat digests quickly, and is a preferred energy source for our body. The saturated fat in animal sources are long chain fatty acids, which digest more slowly and can be associated with negative health affects. The thing to remember is that all fats are not created equal. Fat is good for us, we just want to choose the healthy fats, and coconut is a great choice.
