Feast Friday: Urban Farmer

Method For Ricotta
VitaMix all ingredients until smooth Bring milk and heavy cream up to 200.
Use blue scoop in oval molds Add in basil and cool to 160 , strain and bring back up to 180
Bake 275 Add in vinegar, stir; then salt, stir
Let sit for 2 hours
Pour into hotel pan lined w/ 4 layers of cheese cloth, let set overnight
