'We take bacon, wrap it around, put it in the deep fryer'

PORTLAND, Ore. – Ready to break that New Year’s resolution?

Look no further than Southwest Portland's new restaurant: Uncle Dick’s Deep Fried Hot Dogs.

“We take bacon, wrap it around, put it in the deep fryer, comes out nice and hot,” said owner Dustin Knox. "It seemed like a really fun thing to do."

Uncle Dick’s is a small kitchen at 220 SW Ankeny Street, formerly occupied by Central cocktail bar, which Knox also owns. He’s moving that business to a new location in the next few months.

You can top your bacon-wrapped dog any way you like, or choose from ten specialty hot dogs.

Knox said he’s not trying to reinvent the hot dog. He just wants it to taste really good.

“At the end of the day, it’s a hot dog,” said Knox. “But we really wanted to make it to taste really, really good without making it too gourmet.”

Uncle Dick’s has flavors from all around the world.

“Definitely have swung toward the Asian culture, definitely have some Latino cultures. And I’ll keep branching out from there,” Knox said.

The restaurant opens at 5 p.m. Wednesday and will stay open until 3 a.m. nightly. It also serves waffle fries, deep fried pickles and salads.

Knox said he hopes his uncle Dick will be impressed.

“I see him every so many years and I’m gonna send him a t-shirt,” said Knox. “He has no idea about this.”
